Carrot & Beet Salad
1 part grated beet
4 parts grated carrot
olive oil
vinegar- apple cider, balsamic or red wine
optional additions:
salt and pepper
handful of chopped parsley
raisins
sunflower or pumpkin seeds
pinch of cayenne
chopped apple
Mix all ingredients in a bowl.
